<p>The day after Thanksgiving, Friday, November 25th will kick off our very first Christmas season that we are open to the public.  <span style="color: #008000;">On &#8216;Black Friday&#8217; we will be open 1:00 &#8211; 9:00pm.</span>  We will have freshly-cut<strong> *Fraser Fir Christmas trees</strong> from a fellow farm in North Carolina.  We hope you will bring the family down spend the day with us &#8211; choose the &#8216;perfect&#8217; Christmas tree right here, and then there&#8217;s all the fun, <strong>family-friendly activities</strong> we have for you to enjoy!</p>

			<content:encoded><![CDATA[<p></p><p><strong>For a lively turkey-day kids&#8217; table, have each one make their own turkey placemat.</strong></p>
<p>There&#8217;s all sorts of ways you and your kids can show that you&#8217;re thankful &#8212; for the many blessings each of us have.  A constant reminder is by having the kids make a turkey-day craft.  You can use materials you already have at home, such as brown paper bags, paper plates and a little creativity!</p>
<p>For the bird&#8217;s head and body, help youngsters cut large circles and tracings of their feet from a paper grocery bag.  To make festive feathers, paint or color paper plates and cut them in half several times to get pie slice shapes.  Tape them to the back of the body.  Top the turkey with feet cut from an orange place and facial features (beak, gobbler) form from scraps of paper.</p>
<p>Get creative and make your own version!  You can also have your child write what they are thankful for either on the turkey feathers, or somewhere on the placement.</p>

<h2>PUMPKIN PIE</h2>
<h2>Ingredients</h2>
<ul>
<li>1 (8-ounce) package cream cheese, softened</li>
<li>2 cups canned pumpkin, mashed</li>
<li>1 cup sugar</li>
<li>1/4 teaspoon salt</li>
<li>1 egg plus 2 egg yolks, slightly beaten</li>
<li>1 cup half-and-half</li>
<li>1/4 cup (1/2 stick) melted butter</li>
<li>1 teaspoon vanilla extract</li>
<li>1/2 teaspoon ground cinnamon</li>
<li>1/4 teaspoon ground ginger, optional</li>
<li>1 piece pre-made pie dough</li>
<li>Whipped cream, for topping</li>
</ul>
<h2>Directions</h2>

<p>Preheat the oven to 350 degrees F.</p>
<p>Place 1 piece of pre-made pie dough down into a (9-inch) pie pan and press down along the bottom and all sides. Pinch and crimp the edges together to make a pretty pattern. Put the pie shell back into the freezer for 1 hour to firm up. Fit a piece of aluminum foil to cover the inside of the shell completely. Fill the shell up to the edges with pie weights or dried beans (about 2 pounds) and place it in the oven. Bake for 10 minutes, remove the foil and pie weights and bake for another 10 minutes or until the crust is dried out and beginning to color.</p>
<p>For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt, and beat until combined. Add the eggs mixed with the yolks, half-and-half, and melted butter, and beat until combined. Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated.</p>
<p>Pour the filling into the warm prepared pie crust and bake for 50 minutes, or until the center is set. Place the pie on a wire rack and cool to room temperature. Cut into slices and top each piece with a generous amount of whipped cream.</p>

<li><em>Kackleberry Farm will display the top winners on their website and Facebook following the 2011 Fall Season.  Photo entries may also be shown prior.</em></li>
<li><em>No more than three (3) entries per person.</em></li>
<li><em>Submission of an entry indicates agreement with this policy on the part of the photographer and any persons featured in the photo. It is the photographer’s responsibility to receive permission of any persons prior to submitting the photo.</em></li>
<li><em>All photo entries become property of Kackleberry Farm and may be used in any other media featuring the farm.  Photos may be used online on the farm website, Facebook page  just to mention a few.</em></li>
